This can be made either with hamburger or leftover ground roast beef.
If you don't have leftover mashed potatoes, boil 5 potatoes and mash with milk and butter. If Julia is eating you might need 6 potatoes. She loves mashed potatoes!
1 lb lean ground beef
2 small onions chopped
2 cloves garlic, minced
1 carrot minced (optional)
1/3 cup tomato paste
2/3 cup water
1 tsp dried thyme
2 tsp worcestershire sauce
fresh ground pepper
1 can creamed corn (optional)
In skillet over medium heat, cook beef, stirring to break up meat, until brown; pour off fat. Add onions, garlic and carrot (if using). Cook until tender. Add tomato paste, thyme, worcestershire sauce and pepper to taste. Simmer for 10 or 15 minutes stirring frequently.
Spoon the meat mixture into 2 L baking dish; if using creamed corn spread over meat and then spread mashed potatoes evenly on top. Bake in 375 f oven for 35 minutes.
Makes 5 - 6 servings.

Lasagne
If I don't have time to make spagetti sauce for the lasagne, sometimes I just brown some ground beef, onion and garlic and add two cans sauce then proceed.
2 cups ricotta or cottage cheese
1 egg
1-2 cups shredded mozzarella cheese
12 lasagne noodles (cook as directed on package or buy non-cooking)
In a 13 X 9 inch baking dish put 1/3 of spagetti sauce. Top with 3-4 noodles.
Spread 1/2 of cheese/egg mixture over noodles and spoon a small amount of sauce over.
Top with 3-4 more noodles and spread with rest of cheese/egg mixture covered with a small amount of sauce. Put 3-4 noodles on top and cover with sauce. Sprinkle with mozarella and bake at 350F for 40- 45 minutes.

Baked Ham
Ham is pretty easy to cook. Buy a bone-in ham. Oven temperature is 325 F and only needs to cook for 15 minutes per pound. Just place it in the pan and put it in the oven.
If you want to make a glaze use the leftover juice from the curried fruit. To one cup of fruit juice add 1 tbsp of brown sugar and 1 tsp dried mustard. Half-way through the cooking of the ham baste it with the juice and do it every 15 minutes until done. You can turn the heat up for the last hour so you can cook the scalloped potatoes at the same time. Cover the ham with tinfoil until ready to cut. Pea soup recipe to follow.

Turkey Soup
Well, now that the turkey was a success you get to enjoy the benefit of making homemade turkey soup. Before you can make the soup you have to make stock. Put the turkey and bones in a large pot and cover with water. Add stalk of celery and leaves, whole onion and whole carrot. Bring to a boil and simmer for 5 or 6 hours on low to medium heat, adding water if necessary. Allow to cool and strain the broth into another pot. Cool in the fridge and when it is totally cold you can skim the fat from the top. In the meantime go through the bones and keep any pieces of meat to put in the soup. You can also chop up any leftover turkey.

Roast Turkey with Stuffing
It would be best to buy a turkey fresh because defrosting can take a long time and delay the meal being ready. 10 - 12 lbs is probably a good size to start with and would take about 4 1/2 - 5 hours to cook.
STUFFING
1/2 cup chopped onion
1/2 cup chopped celery
1 diced apple
mushrooms (optional)
Saute with 1/3 to 1/2 cup butter until onion is translucent.
Combine with 6-7 cups breadcrumbs 1 tsp salt, 1/4 tsp pepper 2 tsps poultry seasoning (savory, sage, thyme). Combine breadcrumb mixture and onion & butter mixture. Mix thoroughly and stuff into cavity of turkey.
PREPARING TURKEY
Remove and save giblets (inside turkey cavity). If there are giblets put them in small pot of water and simmer for 1 hour. (to be used for gravy). Rinse inside of turkey cavity with cold water and dry with paper towel. Stuff with stuffing. Drumsticks can be tied together with string to keep stuffing from spilling out.
COOKING TURKEY
Put turkey in roasting pan with breast side up. Brush turkey with a little olive oil and melted butter and sprinkle with salt and pepper. Cover with tin foil and place in 325 f oven. Cook for 5 hours, removing every hour to baste turkey with juices. Remove tinfoil for last hour and after 4 1/2 hours check if done by piercing between leg and breast to see if there is any pink juice. Should be ready between 4 1/2 and 5 hours. Remove turkey from roasting pan and place on cutting board. Remove stuffing and put in casserole dish. Cover and keep warm. Cover turkey with tin foil and let sit 1/2 hour before carving.

Remove most of grease from roasting pan leaving the brown juice and 2 - 3 tbsp of grease. Sprinkle with 1/4 cup flour. Cook flour in grease and juice for 1 minute and then add broth from giblets ( 2 cup liquid) or use chicken stock and white wine if there were no giblets. Stir constantly while bringing to a boil and stir until thickened. Simmer and add salt and pepper.

1 cauliflower

1/4 cup mayonnaise
2 tbsp dijon mustard
2 tbsp grated parmesan cheese
Core cauliflower and remove outer leaves, leaving head intact. In large pot steam cauliflower on rack over boiling water for 20 minutes. Transfer to heatproof serving dish. Combine cheddar, mayonnaise and mustard. Spread over cauliflower. Sprinkle with parmesan cheese. Bake at 425 F for 10 minutes or until topping is bubbling and lightly browned. 6-8 servings.
It is best to get this ready ahead and put in the oven last after everything else is almost ready.
Mmmm good.

Cheesy scalloped potatoes
These are the best ever scalloped potatoes and should make about 8 servings. Easiest made in a blender.
6 med potatoes, peeled and sliced
1/4 cup diced onion
1/4 cup celery leaves
2 springs parsley
3 tbsps flour
1/4 cup butter
1 1/2 tsps salt
1/4 tsp pepper
1 1/2 cups milk
1-2 cups grated old cheddar cheese
Blend everything except potatoes and cheese in blender, mixing thoroughly. Arrange potato slices in buttered 2 quart baking dish. Pour blender mixture over potatoes and sprinkle with grated cheese. Bake uncovered in 350 oven for approx 1 hour.

Combine sugar, salt, curry and butter in a saucepan and bring to a boil. Cook 5 minutes (med to low heat) Drain fruit and keep juice for ham. Put fruit in buttered casserole and pour boiled mixture over. Bake at 300 for 25 minutes.
This is delicious with ham and scalloped potatoes.

Banana Bread
By adding 1 cup of chocolate chips it becomes chocolate chip banana bread.
2 cups flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
pinch salt
1 cup chocolate chips ( if using)
2 cups mashed bananas (about 4 large)
1/2 cup melted butter
1/4 cup milk
2 eggs
Preheat oven to 350 F and grease 9 x 5 loaf pan. In large bowl mix flour, sugar, baking powder, baking soda and salt. Add chocolate chips if using. In another bowl mash bananas add melted butter, milk and eggs. Mix together and pour over flour. Stir till just blended. Spread batter in greased pan and bake 50 to 60 minutes. Test by insterting tester in centre if it comes out clean.
Let cool in pan for 15 minutes. Turn onto rack. Best to let cool completely before cutting. If you can resist.

Butter Chicken
This is a fairly new recipe and everyone loves this one. I have made it with uncooked chicken as well.
2 tbsp butter 2 tbsp tomato paste
1 cup chopped onions 1 tbsp brown sugar
2 tsp minced garlic 1/2 tsp salt
1 tsp chili powder 1/4 tsp pepper
1/2 tsp turmeric 1/3 cup cream (5%)
1/4 tsp cinnamon 1/4 cup plain yogurt
One 19 oz can diced tomatoes 1 tbsp fresh cilantro
One whole rotisserie chicken cut into chunks or I use uncooked chicken (3 breasts cut in 1 inch pieces) and cook it in frying pan with 1-2 tbsp olive oil first. It is really good if you marinate the uncooked chicken for several hours with lemon juice and tandoori spice. mmmmmm
Melt butter in deep skillet over medium heat. Add onions and garlic. Cook slowly, stirring often, until onions are tender about 5 minutes.
Add gingerroot, chili powder, turmeric and cinnamon. Cook 1 minute more. Add undrained tomatoes, tomato paste, brown sugar, salt and pepper. Reduce heat to low. Cover and simmer for 15 - 20 minutes stirring occasionally.
Add cut up chicken ( or precooked chicken if using uncooked), cream and sour cream or yogurt.
Simmer 15 minutes more uncovered. Remove from heat, stir in cilantro and serve or rice or with Naan Bread. (see recipe)

Apple Crisp
Orginally I told Julia that I would make a cookbook for her but I think I will surprise her and make it through my blog. That way she can look them up on her computer.
Today is Good Friday and I am grateful today for spring ( even though it is -12 .)
This is always one of everyone's favorites in our house, especially Julia.
Apple Crisp
6-7 apples
Set oven to 350 F and butter baking dish.
Combine 1/2 cup brown sugar
1/2 cup flour
1/2 cup oatmeal
1/2 tsp cinnamon
Add 1/2 cup butter by cutting it in small pieces and combining it with hands or in food processor.
Peel and slice apples to half fill baking dish and sprinkle with 1 tbsp white sugar and 1/2 tbsp lemon juice.
Put topping over apples and bake 40 minutes in oven.

Beginning blogger
As this is my first posting to my new blog and I am a new blogger, I have no idea what I want to blog about. I always start my day by reading the newspaper and then I check e.mail and I read my yoga teacher's blog every day, which I enjoy a lot. Today I am grateful for the sunshine and that just gave me my first blog idea. I can post what I am grateful for every day.
